Japchae: Korean Glass Noodles with Vegetables and Beef

Japchae is one of the most beloved dishes in Korean cuisine β€” and once you try it, you'll instantly understand why! The glossy, chewy glass noodles tossed with colorful vegetables and tender marinated beef create a dish that is as beautiful to look at as it is delicious to eat. Whether served as a side dish at a festive Korean meal or as a satisfying main course, Japchae never fails to impress. Here's how you can easily make this classic Korean recipe at home in Germany or anywhere in Europe.

What Is Japchae?

Japchae (μž‘μ±„) literally means "mixed vegetables" and is a traditional Korean dish dating back to the 17th century. The star of the show is Dangmyeon (λ‹Ήλ©΄) β€” Korean glass noodles made from sweet potato starch. They have a wonderfully chewy, slightly slippery texture and soak up the savory soy-sesame sauce beautifully.

Japchae is naturally gluten-free (if you use gluten-free soy sauce), highly versatile, and great for meal prep. No wonder it's a staple at Korean celebrations like Chuseok (Harvest Festival) and birthdays!

Ingredients (Serves 4)

Glass Noodles:

  • 200g Korean glass noodles (Dangmyeon) – available at omune.de
  • 1 tbsp soy sauce, 1 tsp sesame oil, 1 tsp sugar

Beef Marinade:

  • 200g beef (sirloin or tenderloin), thinly sliced
  • 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp sugar, 1 garlic clove (minced), black pepper

Vegetables:

  • 1 carrot (julienned), 1 red bell pepper (sliced), 100g fresh spinach
  • 5–6 dried shiitake mushrooms (soaked & sliced), 1 onion, 2 spring onions

Sauce:

  • 3 tbsp soy sauce, 2 tbsp sesame oil, 1.5 tbsp sugar, 1 garlic clove (minced), 1 tbsp toasted sesame seeds

Step-by-Step Instructions

  1. Cook the noodles: Boil Dangmyeon for 6–8 minutes, rinse under cold water, and season with soy sauce, sesame oil, and sugar. Cut into manageable lengths with scissors.
  2. Marinate & cook the beef: Let it marinate for at least 15 minutes, then stir-fry over high heat.
  3. SautΓ© each vegetable separately: This keeps each vegetable's color and texture vibrant β€” it's the secret to authentic Japchae!
  4. Prepare egg garnish: Fry egg yolk and white separately into thin omelettes, then slice into strips.
  5. Combine everything: In a large bowl, mix noodles, beef, and all vegetables with the sauce. Toss thoroughly (using gloved hands works best!), and garnish with sesame seeds and egg strips.

Pro Tips

  • 🌿 Go vegetarian: Skip the beef or replace it with tofu β€” it's just as delicious!
  • ❄️ Meal prep: Japchae keeps for 2–3 days in the fridge. Reheat in a pan with a drizzle of sesame oil.
  • 🍜 Use real Korean Dangmyeon: The texture is unique and can't be replicated with Chinese or Japanese glass noodles.
  • 🌢️ Want it spicy? Add a spoonful of Gochujang (Korean chili paste) to the sauce for extra depth and heat.
